What is Gluten?
Gluten is the common
name for the proteins found in wheat, rye, and barley that are harmful to
persons with celiac disease or gluten intolerance. People with celiac disease
suffer an adverse autoimmune
reaction when they consume gluten. People with gluten-sensitivity cannot
tolerate gluten and may develop gastrointestinal
symptoms similar to those in celiac disease.
What Does It Mean To Be Gluten Free?
Starting a gluten-free diet can seem intimidating, overwhelming and frustrating. Having to give up foods you love such as bread, pasta, cookies, crackers, pizza seems very disheartening. But it doesn’t have to be! You can still eat all the familiar foods you love, but you learn to look for gluten-free options. There may be more work and creativity involved finding foods without gluten, but they are out there. When you’re gluten-free, you get used to reading labels and digging a little deeper to know for sure what you can and can’t eat.
