1/2 cup Grandpa Pete's Sunday Marinara Sauce
1/2 lb Italian sausage, casing removed
Red pepper flakes
Italian bread, or English muffin
Pour marinara into an 8-10 inch skillet over medium heat. Make two divots in the sauce using a spoon and crack one egg into each. Sprinkle a pinch of red pepper flakes. Cover the skillet with a lid until the white of the eggs are fully set and the yolk is cooked to your desire (5-8 mins). Sprinkle with parmesan cheese and garnish with parsley. Serve with bread for dipping.
